At this point I think every person in America has been to a VERY Americanized taco night. I don’t even have to describe it, you know the one. Bagged shredded cheese (Mexican blend, of course), tub of sour cream, Pace salsa (mild), gray ground beef, a pouch of Old El Paso taco seasoning. Maybe if you’re lucky there will be a bottle of Ortega or TacoBell “hot sauce”. There’s probably iceberg lettuce, tomatoes and white onion cut way too large, all kept separate. Standard flour tortillas and stale-ass hard shells that make a gigantic mess.
Please, we gotta stop doing this.
Here’s an alternative option. This also qualifies as an “EMERGENCY DAD MEAL” because of it’s ease, limited ingredients and speed. Break glass in case of emergency and save the day with these.
PS - they also make an awesome Saturday morning breakfast.
RECIPE:
2 cans of Bush’s Best Sidekicks Pinto Beans
1 cup salsa (ok to omit but it really bumps up the flavor)
2 cups/1 bag shredded cheese (Monterrey jack is a great option, avoid cheddar as it gave me a weird taste)
8 Tortillas
2 tbsp neutral oil or pan spray

Mix the beans and the salsa in a bowl
Mash the beans quite a bit, you want a pretty homogenous paste
Heat your pan on 5/10 heat, be cautious going hotter, if you need to adjust anything go down and cook them slower
Scoop 1/4 cup of the bean mix onto one side of a tortilla
Top with a big pinch of cheese
Fold the tortilla in half, giving it a little squish to seal it together
Fry the tortilla on the pan for about 3 minutes until the first side is nice and crispy
Flip and repeat on the other side for 2-3 minutes. You want these crispy, so don’t be afraid to push the line of burnt and really crispy
Repeat frying process until all tacos are done
Feel free to peel them open and top with fresh onions, pickled onions or any other toppings you love. Serve immediately!
Surprise Recipe! But not really…
These are really good as is, but if you whip up a quick weeknight guac to scoop with your crispy taco…it’s great.
Get a couple of avocados into a bowl and begin mashing them up
Add salt and begin squirting in lime juice, taste as you go and make it perfect for you.
I prefer making this very smooth, but leave chunks if you like!
